Corn flour muffins with Kriška
Ingredients
– 2 eggs
– 1 cup yoghurt
– 2 cups corn flour
– ½ cup olive oil
– 1 teaspoon baking soda
– ½ teaspoon salt
– 1 tablespoon apple cider vinegar
– 250 g finely chopped cheese Kriška
– 2 strips chopped and fried bacon
– 100 g ajvar (relish made from sweet bell peppers and eggplants)
Preparation
Dough
Beat two eggs, and add yoghurt, olive oil, corn flour, baking soda, salt and apple cider vinegar. Knead the dough.
Filling
Mix 250 g finely chopped cheese Kriška and bacon.
Fill the muffin tins with the dough up to half. Add a teaspoon of filling and a teaspoon of ajvar to each tin, and then top each tin with dough.
Bake in the oven at 250 degrees for 15-20 minutes.
Serve with a glass of yoghurt or kefir. Enjoy your meal!
